His wine is full, but dry and austere, minerally dry flecked with lemon sherbet, green apple core and lime zest. Chill it down. Love it." Oz Clarke (Oz Clarke Wine Buying Guide 2008)The use of only the very best 500 litres per tonne of grapes has resulted in this wine being very intensely flavoured and aromatic. The wine has very lifted riesling character with citrus aromatics of lime and lemon. The palate is seamless with moderate viscosity and brisk acid finish. Use as an aperitif or with any seafood. Bright, pale lemon in colour with strong tinges of green. On the nose the wine is invitingly aromatic with fresh, florals backed up by clean orange and lime zest characters and intriguing spiciness. There are fresh, crisp lime and lemon juice flavours together with a minerally tang that really wakes up the tastebuds. The fruit fills the mouth leading into a finish that is clean and refreshing with excellent flavour persistence.0
The fruit for this Riesling comes from a single vineyard perched up on the western boundary of the Clare Valley at an altitude of some 500 metres above sea level. It has been a regular Gold Medal winner at the Adelaide Wine Show and is now showing the benefits of a few years in bottle. Delicious.10
Premium Riesling fruit was selected from Stuart Woodman's 100 year old vineyard near Springton. The grapes were ripe with typical aromatic lime characters that are distinctive of the Eden Valley region. The fruit was crushed and immediately chilled to 10 degrees to reduce the possibility of oxidation. The juice was settled and the clean juice was seeded with an aromatic yeast strain for fermentation which took 3 weeks. After fermentation, the wine was settled and cold stabilized prior to filtration. The wine is pale green, bright and clear, with a herbaceous, lovely Sauvignon Blanc like characters and subtle rosewater tints. The palate is smooth and rich, well balanced with fresh citrus freshness and length. Bottle development has enhance the wonderful Eden Valley flavours with an underlying layer of complexity and honeyed flavours.
