The Aberfeldy vineyard is a unique site - friable red loam over limestone nestled at the bottom of the eastern most hills of the Clare Valley, just 5 km south east of the township of Clare. When the Birks family of Wendouree fame settled the area they planted this site with Shiraz in 1904. Many of these vines remain and those which have perished have been replaced with rootlings of the same clones. The cropping level in the vineyard is never more than 1.5 tonnes per acre, producing grapes with intense colour, flavour and tannins. This fruit is the backbone of ‘Aberfeldy’ Shiraz.
The wine has vibrant magenta colour with aromatics of cherry, plum, dark berries and chocolate complemented by the oak derived characters of clove, cinnamon, nutmeg and vanilla. The palate is full bodied with dark berry conserve flavours and balanced oak, tannin and acidity. The wine has persistent sweet fruit and oak aftertaste, with power and great finesse, and will reward patient cellaring.

"Fresh, fruity, with a note of green pepper. With a lovely freshness on the palate, spicy notes, and a real lift, this is really mouthwatering on the finish.

Blending fruit from a range of local vineyards has produced a wine with both regional and varietal definition. The wine shows bright magenta colour and aromas of red berry conserve and spice, enhanced by the complexity gained from 12 months American oak maturation. The palate is full and soft in the front and middle, with the flavour of small berry fruit again the oak complementing the fruit. The finish is medium to firm, with tannins coming from both fruit and oak. The wine has not been cold stabilised and so may form a harmless crystalline deposit in the bottle, necessitating decanting before serving. This wine has power and finesse, making it both approachable now and worth keeping for up to 10 years under good cellaring conditions.

"Serious, balanced, rich Cabernet, marvellously dense, a perfect example of why Clare is such a special growing environment: the sun has ripened the grapes to their max, but the cool conditions have preserved a mouthwatering freshness. It still needs a few years' age, but if you like your reds thick and strong you can lay into it now. The mixture of leaf and blackcurrant in its smell is Bordeaux-like, and the dark blackcurrant fruit, lightened by mint yet hemmed in by tannin and acidity, is reminiscent of a young Pauillac. If that's not high praise, I don't know what is."

Tim Adams has taken the best Clare Cabernet fruit he can find and beefed it up with 11% Malbec The addition of the Malbec adds to the complexity of the palate which is dominated by fresh blackcurrant and rhubarb aromas and flavours. Twenty-four months in French oak provides spice and balance to this full-bodied style. I will cellaring well for up to ten years.

" Tim continues his incredible ascent to the pantheon of great Aussie winemakers (where they presumably drink awesome wines all day and night!), albeit with wines that everyone can afford and with uncharacteristic stealth, modesty and integrity. A big man, 'Bonecrusher' Adams is surprisingly subtle and contemplative and this is a clue to the sheer brilliance behind his staggeringly delicious wines. The Fergus is a complex blend of Grenache, Cabernet, Shiraz, Cabernet Franc, Tempranillo and Malbec and it sees only old oak hogsheads for twelve months, which allows the fruit to dominate the end wine and not raw, unattractive oak unlike many of his neighbours' wines. It is drinking perfectly now, but it will mature for a decade. It is succulent and plush and yet complex and intricate at the same time. International Wine & Spirit Competition 2009

The fourteenth release of ‘The Fergus’, named after Tim's neighbour who was good enough to sell Tim his grenache grapes in the vintage of 1993 during a desperate shortage of shiraz and cabernet. The wine has lifted red berry aromas and flavours, complexed by grenache spiciness and given extra back palate astringency by the blending of other red varieties. It is a mouth-filling wine that may be kept for up to 10 years, but will go nicely with duck, turkey, lamb and gamey meats any time soon.
Grenache grapes were crushed on to fermented and drained skins of Cabernet Sauvignon, Shiraz and Malbec. Fermentation on skins lasted one week. The tanks were then topped and closed for two weeks prior to pressing the skins. The wines were then racked several times before filtration and transferred to old American oak. They remained in oak until blending, fining, filtration and bottling.

Riesling wines from Clare Valley are most enjoyable when young and zesty, or left to mature beyond five years of age. This wine has been sealed with screw cap to ensure its freshness and authenticity and will cellar for 20 years in good conditions.

THE STORY
Tim Adams and his wife Pam are currently producing the best value wines coming out of Australia. Produced from both their own vineyards and a group of fiercely loyal local growers whose vineyards are sited in varying microclimates right across the valley, they are sweeping all before them.

Principal varieties processed are Shiraz, Semillon, Riesling, Cabernet Sauvignon, Cabernet Franc, Malbec and Grenache. Wine styles are traditional, being dry whites made from Riesling and Semillon and medium to full bodied reds made from Grenache, Shiraz and Cabernet.

In 2006, the 2006 Tim Adams Clare Valley Riesling (see below) won the Hyatt Riesling Trophy in Canberra for Best Riesling in competition with 458 Rieslings from all over the world. Last year The Fergus won two International WINE Challenge trophies, while The Shiraz has won several IWC Gold Medals over the last few years. This year his 2007 Semillon won the International Semillon Trophy in the 2008 International Wine Challenge.
